Although many of the restaurant’s dishes
incorporate myriad exotic ingredients like kimchi,
tamarind, miso, and gochu jang, Lo categorizes
Bar Q as an American concept restaurant. “Most
people view American cuisine through a narrow,
Eurocentric lens,” notes Lo. “But I would argue that
American haute cuisine is a multicultural, personal
cuisine.” This culinary aesthetic will be further
developed in Lo’s next project, a cookbook. “It’s
about identity politics, but it’s not as academic
as that sounds,” she jokes. “It’s a food memoir/
recipe book and each chapter will focus on a
different ingredient with personal and historic
stories attached.”
While Lo’s culinary repertoire reflects multicultural
influences, she herself is equally multidimensional.
She even dismisses the classification of herself
as a “female chef,” claiming gender is a social
