in the first season we stumbled upon amazing wild herbs and plants
that existed here on the island. the first herb we found was wild
oregano that was discovered by its smell—when we walked through
the grass‚ and it was stepped on‚ the scent of oregano spread. An
amazing discovery we thought, and very different from farmed
oregano in appearance.
With an herb dictionary‚ and the book Nordic flora‚ we now pick
almost 30 different wild herbs and plants native to the island and
are also largely self-sufficient with lettuce‚ sprouts and herbs from
our garden.
to constantly seek new and old ways of using what grows around
the neighbourhood‚ the mysteries of taste‚ fragrance and the
legacy of the northern cuisine‚ is something we tirelessly continue
to pursue. not because it has been a key ingredient establishing us
as sweden’s best restaurant for many years‚ or that we are on “the
World’s 50 Best Restaurants” list for the past five years‚ but because
