...stiffy tacky pudding
One of my favorite dishes is “Stiffy Tacky
Pudding”, a play on Cartmel’s long revered sticky
toffee pudding. After much experimentation,
we’ve broken it down into its constituent tastes,
and recreated each flavour in five individual balls
of flavour. It certainly challenges traditional fare
but not in a way that is disrespectful or mean-
spirited. It welcomes people into a new way of
thinking about their food without making them
uncomfortable or inadequate.
But what really excites me this year is
the construction of our new research and
development facilities, which will take my
creative process to the next level—L’enclume’s
interiors
voice is about to get a lot louder n
