Over time my style has evolved into one of
simplicity. And for me, simplicity is beauty and this
means allowing the individual components of a
dish to speak for themselves without becoming
diluted and unnecessarily frivolous. Every
ingredient has to have a purpose in an order that
makes sense, but it also has to possess a lightness
and balance while offering maximum flavor.
All I require at L’enclume is for my guests to arrive
with an open mind and a sense of humor, as we
are keen to have a laugh and not take ourselves
