cannot be copied, borrowed or stolen but like art
and music it needs to be transmitted and received.
That is why I strongly believe that we all, chefs,
artisans, farmers, sommeliers and even journalists
have an enormous responsibility at hand. We are
all part of a great culinary revolution. We cannot
return to the kitchens of our grandmothers. We
are not here to serve food to hungry bellies but to
