Each of us translates our personal narrative—that

different journey to get there. A plate is the sum of
many parts. It is as individual as our fingerprints. It
cannot be copied, borrowed or stolen but like art
and music it needs to be transmitted and received.
That is why I strongly believe that we all, chefs,
artisans, farmers, sommeliers and even journalists
have an enormous responsibility at hand. We are
all part of a great culinary revolution. We cannot
return to the kitchens of our grandmothers. We
are not here to serve food to hungry bellies but to
